Description

Delicious cauliflower tacos that are healthy, easy to make, and perfect for sharing.


Ingredients

Scale
  • 1 head of cauliflower, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small tortillas
  • 1 cup slaw (cabbage, carrots, etc.)
  • 1 avocado, sliced
  • 1 lime, juiced

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss chopped cauliflower with olive oil, cumin, chili powder, salt, and pepper.
  3. Spread cauliflower on a baking sheet and roast for 25-30 minutes until golden and tender.
  4. While the cauliflower roasts, prepare the slaw and slice the avocado.
  5. Warm the tortillas in a pan or microwave.
  6. Assemble each taco by filling with roasted cauliflower, slaw, and avocado.
  7. Squeeze lime juice over the top and serve immediately.

Notes

For extra flavor, serve with lime wedges, hot sauce, or salsa. Keep taco components separate when storing leftovers.
