Delicious cauliflower tacos that are healthy, easy to make, and perfect for sharing.
Ingredients
Scale
- 1 head of cauliflower, chopped
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 8 small tortillas
- 1 cup slaw (cabbage, carrots, etc.)
- 1 avocado, sliced
- 1 lime, juiced
Instructions
- Preheat the oven to 425°F (220°C).
- Toss chopped cauliflower with olive oil, cumin, chili powder, salt, and pepper.
- Spread cauliflower on a baking sheet and roast for 25-30 minutes until golden and tender.
- While the cauliflower roasts, prepare the slaw and slice the avocado.
- Warm the tortillas in a pan or microwave.
- Assemble each taco by filling with roasted cauliflower, slaw, and avocado.
- Squeeze lime juice over the top and serve immediately.
Notes
For extra flavor, serve with lime wedges, hot sauce, or salsa. Keep taco components separate when storing leftovers.
