A comforting and creamy potato soup featuring sharp cheddar cheese, garlic, and fresh herbs.


Ingredients

  • 4 Yukon Gold potatoes, peeled and diced
  • 2 cups sharp cheddar cheese, shredded
  • 4 cloves garlic, minced
  • Fresh herbs (such as thyme and parsley)
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 tablespoons butter
  • 1 cup cream
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Peel and dice Yukon Gold potatoes.
  2. In a large pot, melt butter over medium heat and sauté diced onions until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce to a simmer until potatoes are tender, about 15-20 minutes.
  5. Use an immersion blender to puree the soup to your desired consistency.
  6. Stir in shredded cheddar cheese and cream, and season with salt and pepper to taste.
  7. Add fresh herbs before serving.
  8. Enjoy warm.
