Ingredients

- 4 Yukon Gold potatoes, peeled and diced
- 2 cups sharp cheddar cheese, shredded
- 4 cloves garlic, minced
- Fresh herbs (such as thyme and parsley)
- 4 cups vegetable broth
- 1 onion, diced
- 2 tablespoons butter
- 1 cup cream
- Salt, to taste
- Pepper, to taste
Instructions
- Peel and dice Yukon Gold potatoes.
- In a large pot, melt butter over medium heat and sauté diced onions until translucent.
- Add minced garlic and cook for another minute.
- Add the diced potatoes and vegetable broth. Bring to a boil, then reduce to a simmer until potatoes are tender, about 15-20 minutes.
- Use an immersion blender to puree the soup to your desired consistency.
- Stir in shredded cheddar cheese and cream, and season with salt and pepper to taste.
- Add fresh herbs before serving.
- Enjoy warm.
