- 1 1/2 cups shredded cheddar cheese (or a mix of your favorite cheeses)
- 1/2 cup sour cream (optional, for serving)

Instructions
- Preheat your oven to 400°F (200°C).
- Wash and cut the baby potatoes into halves or quarters.
- Slice the smoked sausage into 1/4-inch thick rounds.
- In a small bowl, mix ranch seasoning, garlic powder, onion powder, and black pepper.
- In a large bowl, drizzle olive oil over halved potatoes and sprinkle with half of the ranch seasoning mixture, tossing to coat.
- Line a baking sheet with parchment paper or grease it lightly.
- Spread the seasoned potatoes on the baking sheet in a single layer.
- Scatter sliced sausage pieces over the potatoes.
- Roast in the oven for 35-40 minutes, stirring halfway through.
- Remove from the oven, sprinkle cheese over the top, and return for an additional 5 minutes or until melted.
- Garnish with parsley and serve hot with sour cream, if desired.
