- 1 bell pepper, diced
- 1 onion, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 8 flour tortillas
- 2 tablespoons olive oil
- Sour cream and salsa for serving
Instructions
- Heat the oil: In a skillet over medium heat, add the olive oil.
- Sauté the veggies: Toss in the diced onion and bell pepper, stirring until softened.
- Add chicken and spices: Mix in the shredded chicken, cumin, and chili powder. Heat until everything is thoroughly warmed.
- Prepare the tortillas: In another skillet, place one flour tortilla. Sprinkle half with cheese, then top with a portion of the chicken mixture, followed by more cheese. Fold the tortilla in half.
- Cook to perfection: Grill each side for about 3-4 minutes until golden brown and the cheese is melted.
- Repeat: Continue with the remaining tortillas and filling.
- Serve: Slice into wedges and enjoy with sour cream and salsa.
