- 1 cup unsweetened cocoa powder
- 1 cup sugar
- 1/2 cup unsalted butter, melted
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
- 1/2 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a large bowl, mix together cocoa powder, sugar, melted butter, eggs, and vanilla until fully combined.
- Stir in the flour and salt just until smooth and incorporated.
- Pour the brownie batter into the prepared pan and bake for 20-25 minutes or until a toothpick comes out with a few moist crumbs.
- While the brownies cool, prepare the mousse by melting the chocolate chips using a double boiler method.
- Allow the melted chocolate to cool slightly. In a separate bowl, whip the heavy cream with powdered sugar until soft peaks begin to form.
- Gently fold the melted chocolate into the whipped cream until combined.
- Once the brownies have cooled, spread the mousse over the top and refrigerate for at least 2 hours to set.
- After chilling, cut into squares and serve, optionally topped with extra whipped cream or a drizzle of chocolate ganache.
Notes
Garnish with fresh berries or mint leaves for added appeal. Consider pairing with vanilla ice cream or a sprinkle of flaky sea salt.
