  • 1 cup semi-sweet chocolate chips
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a large bowl, mix together cocoa powder, sugar, melted butter, eggs, and vanilla until fully combined.
  3. Stir in the flour and salt just until smooth and incorporated.
  4. Pour the brownie batter into the prepared pan and bake for 20-25 minutes or until a toothpick comes out with a few moist crumbs.
  5. While the brownies cool, prepare the mousse by melting the chocolate chips using a double boiler method.
  6. Allow the melted chocolate to cool slightly. In a separate bowl, whip the heavy cream with powdered sugar until soft peaks begin to form.
  7. Gently fold the melted chocolate into the whipped cream until combined.
  8. Once the brownies have cooled, spread the mousse over the top and refrigerate for at least 2 hours to set.
  9. After chilling, cut into squares and serve, optionally topped with extra whipped cream or a drizzle of chocolate ganache.
