Ingredients

  • 1 pound ground turkey
  • 2 cups bread crumbs (preferably day-old)
  • 1 cup cranberries (dried or fresh)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • 1 tablespoon sage (or your favorite herb)
  • 2 large eggs
  • Salt and pepper to taste
  • Optional: 1 cup chicken broth (if mixture feels dry)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground turkey, bread crumbs, cranberries, chopped onion, and minced garlic.
  3. Add the herbs, salt, and pepper, and mix until well combined.
  4. Beat the eggs in a separate bowl, then add them to the mixture and mix again until evenly distributed.
  5. If the mixture feels too dry, stir in the chicken broth, one tablespoon at a time, until manageable.
  6. Form small balls (about 1 to 1.5 inches in diameter) and place them onto the prepared baking sheet.
  7. Bake in the oven for about 25-30 minutes, or until golden brown and cooked through.
  8. Let them cool for a few minutes before serving. Enjoy!

Notes

Use day-old bread for better moisture absorption. Don’t overmix to keep a light texture.
