- 2 cups cooked chicken, shredded
- 1 cup cauliflower florets
- 1 cup broccoli florets
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 cup diced onions
- 1/2 cup diced bell peppers (any color)
Instructions
- Preheat your oven to 350°F (175°C).
- Heat the olive oil in a large skillet over medium heat. Add the diced onions and bell peppers. Sauté until they are softened, about 3-4 minutes.
- In a large mixing bowl, combine the shredded chicken, cauliflower, broccoli, cheese, heavy cream, garlic powder, onion powder, salt, and pepper.
- Add the sautéed vegetables from the skillet to the mixing bowl and stir until well mixed.
- Transfer the mixture to a greased casserole dish.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is bubbling.
- Let it cool for a few minutes before serving.
Notes
Pairs well with a light green salad or roasted vegetables. Garnish with fresh herbs for added flavor.
