Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers (any color)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the diced onions and bell peppers. Sauté until they are softened, about 3-4 minutes.
  3. In a large mixing bowl, combine the shredded chicken, cauliflower, broccoli, cheese, heavy cream, garlic powder, onion powder, salt, and pepper.
  4. Add the sautéed vegetables from the skillet to the mixing bowl and stir until well mixed.
  5. Transfer the mixture to a greased casserole dish.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is bubbling.
  7. Let it cool for a few minutes before serving.
