- 1 pound store-bought or homemade potato gnocchi
- 1 cup canned pumpkin puree
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 teaspoon ground nutmeg
- Salt and freshly ground black pepper, to taste
- Fresh sage leaves, for garnish
- Grated Parmesan cheese, for garnish
Instructions
- Bring a large pot of salted water to a boil over high heat.
- Cook the gnocchi in the boiling water according to the package instructions or until they float to the top, around 2-3 minutes. Drain and set aside.
- In a large skillet, heat the olive oil and butter over medium heat until melted and bubbling.
- Add the finely chopped onion and sauté until translucent, about 4-5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add pumpkin puree to the skillet and mix well with the sautéed onions and garlic.
- Gradually pour in the heavy cream, stirring continuously to create a smooth sauce.
- Sprinkle in grated Parmesan cheese and ground nutmeg, stirring until the cheese melts.
- Season the sauce with salt and black pepper to taste.
- Gently fold the cooked gnocchi into the creamy pumpkin sauce, ensuring they are well coated.
- Cook for an additional 2-3 minutes to meld the flavors.
- Transfer to serving plates and garnish with fresh sage leaves and additional grated Parmesan.

For a vegan version, substitute heavy cream and cheese with plant-based alternatives.
