Description

A comforting dish of soft potato gnocchi tossed in a rich pumpkin sauce with heavy cream and Parmesan, topped with fresh sage.


Ingredients

  • 1 pound store-bought or homemade potato gnocchi
  • 1 cup canned pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground nutmeg
  • Salt and freshly ground black pepper, to taste
  • Fresh sage leaves, for garnish
  • Grated Parmesan cheese, for garnish

Instructions

  1. Bring a large pot of salted water to a boil over high heat.
  2. Cook the gnocchi in the boiling water according to the package instructions or until they float to the top, around 2-3 minutes. Drain and set aside.
  3. In a large skillet, heat the olive oil and butter over medium heat until melted and bubbling.
  4. Add the finely chopped onion and sauté until translucent, about 4-5 minutes.
  5. Stir in the minced garlic and cook for an additional minute until fragrant.
  6. Add pumpkin puree to the skillet and mix well with the sautéed onions and garlic.
  7. Gradually pour in the heavy cream, stirring continuously to create a smooth sauce.
  8. Sprinkle in grated Parmesan cheese and ground nutmeg, stirring until the cheese melts.
  9. Season the sauce with salt and black pepper to taste.
  10. Gently fold the cooked gnocchi into the creamy pumpkin sauce, ensuring they are well coated.
  11. Cook for an additional 2-3 minutes to meld the flavors.
  12. Transfer to serving plates and garnish with fresh sage leaves and additional grated Parmesan.

Notes

For a vegan version, substitute heavy cream and cheese with plant-based alternatives.
