Description

Ingredients

  • 8 oz spaghetti or fettuccine
  • 1 cup ripe tomatoes, diced
  • 1 cup heavy cream
  • 4 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until golden brown.
  3. Toss in the diced tomatoes, along with salt and pepper, and let them simmer for about 5 minutes.
  4. Lower the heat and stir in the heavy cream, mixing until blended.
  5. Add the cooked pasta to the skillet, tossing gently until evenly coated with the sauce.
  6. Serve immediately, garnished with fresh basil and grated Parmesan cheese if desired.

Notes

For a lighter version, substitute heavy cream with half-and-half or a light cream alternative. Keep leftovers in an airtight container for up to 3 days.
