Description

A comforting, creamy white chicken chili that’s easy to prepare and perfect for busy weeknights.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (4 ounces) diced green chiles
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Layer the chicken breasts at the bottom of the crockpot.
  2. Add the white beans, corn, diced green chiles, chopped onion, and minced garlic on top of the chicken.
  3. Pour in the chicken broth, then add cumin, chili powder, salt, and pepper.
  4. Gently stir to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once done, shred the chicken in the pot and stir in the sour cream.
  7. Serve topped with shredded cheese and cilantro if desired.

Notes

For a vegan version, use jackfruit or tofu and vegetable broth. Consider searing the chicken beforehand for enhanced flavor.
