A comforting, creamy white chicken chili that’s easy to prepare and perfect for busy weeknights.

- 2 pounds boneless, skinless chicken breasts
- 1 can (15 ounces) white beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (4 ounces) diced green chiles
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese (optional)
- Chopped cilantro for garnish (optional)
Instructions
- Layer the chicken breasts at the bottom of the crockpot.
- Add the white beans, corn, diced green chiles, chopped onion, and minced garlic on top of the chicken.
- Pour in the chicken broth, then add cumin, chili powder, salt, and pepper.
- Gently stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once done, shred the chicken in the pot and stir in the sour cream.
- Serve topped with shredded cheese and cilantro if desired.
Notes
For a vegan version, use jackfruit or tofu and vegetable broth. Consider searing the chicken beforehand for enhanced flavor.
