Description

Mouthwatering chicken enchiladas filled with tender shredded chicken and melted cheese, perfect for any occasion.


Ingredients

  • 2 cups Cooked and shredded chicken
  • 1 can Red enchilada sauce (10 oz)
  • 2 cups Shredded Monterey Jack cheese
  • 8 pieces Flour tortillas
  • 1 tablespoon Vegetable oil
  • 1 small Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • to taste Salt and pepper
  • for garnish Chopped cilantro
  • for serving Sour cream

Instructions

  1. Prepare the chicken: Boil or bake the chicken until fully cooked, then shred it.
  2. Sauté the aromatics: Heat oil in a skillet, sauté onion and garlic until soft.
  3. Mix the chicken filling: Add shredded chicken and seasonings to skillet, cook until heated through.
  4. Prepare the baking dish: Pour a bit of enchilada sauce into the bottom of a baking dish.
  5. Assemble the enchiladas: Fill tortillas with chicken mixture, roll, and place seam side down in the dish.
  6. Add sauce and cheese: Pour remaining sauce over enchiladas, top with cheese.
  7. Bake: Cover with foil and bake at 375°F for 20-25 minutes, uncover and bake until cheese is bubbly.
  8. Rest and garnish: Let rest, garnish with cilantro, and serve with sour cream.
