- 2 cups Cooked and shredded chicken
- 1 can Red enchilada sauce (10 oz)
- 2 cups Shredded Monterey Jack cheese
- 8 pieces Flour tortillas
- 1 tablespoon Vegetable oil
- 1 small Onion, chopped
- 2 cloves Garlic, minced
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- to taste Salt and pepper
- for garnish Chopped cilantro
- for serving Sour cream
Instructions
- Prepare the chicken: Boil or bake the chicken until fully cooked, then shred it.
- Sauté the aromatics: Heat oil in a skillet, sauté onion and garlic until soft.
- Mix the chicken filling: Add shredded chicken and seasonings to skillet, cook until heated through.
- Prepare the baking dish: Pour a bit of enchilada sauce into the bottom of a baking dish.
- Assemble the enchiladas: Fill tortillas with chicken mixture, roll, and place seam side down in the dish.
- Add sauce and cheese: Pour remaining sauce over enchiladas, top with cheese.
- Bake: Cover with foil and bake at 375°F for 20-25 minutes, uncover and bake until cheese is bubbly.
- Rest and garnish: Let rest, garnish with cilantro, and serve with sour cream.
