- 1 lb thinly sliced ribeye or sirloin beef
- 8 oz provolone cheese, sliced
- 1 cup mixed bell peppers, chopped
- 1 medium sweet onion, chopped
- 2 tbsp extra virgin olive oil
- 4 low-carb tortillas (almond flour or coconut flour)
Instructions
- Slice your beef into thin strips and chop the bell peppers and onion.
- Heat olive oil in a skillet over medium heat. Add the chopped onions and bell peppers, sautéing for about 5-7 minutes until softened.
- Increase the heat to medium-high, then add your sliced beef to the skillet. Season with salt and pepper and cook, stirring, until browned (about 3-5 minutes).
- Reduce the heat to low. Place provolone slices over the beef mixture and cover the skillet until the cheese melts completely.
- Spoon the beef and cheese mixture onto each tortilla and roll them tightly.
- Return the roll-ups seam-side down to the skillet. Cook until golden brown on all sides, approximately 3-4 minutes total.
