Ingredients

  • 1 lb thinly sliced ribeye or sirloin beef
  • 8 oz provolone cheese, sliced
  • 1 cup mixed bell peppers, chopped
  • 1 medium sweet onion, chopped
  • 2 tbsp extra virgin olive oil
  • 4 low-carb tortillas (almond flour or coconut flour)

Instructions

  1. Slice your beef into thin strips and chop the bell peppers and onion.
  2. Heat olive oil in a skillet over medium heat. Add the chopped onions and bell peppers, sautéing for about 5-7 minutes until softened.
  3. Increase the heat to medium-high, then add your sliced beef to the skillet. Season with salt and pepper and cook, stirring, until browned (about 3-5 minutes).
  4. Reduce the heat to low. Place provolone slices over the beef mixture and cover the skillet until the cheese melts completely.
  5. Spoon the beef and cheese mixture onto each tortilla and roll them tightly.
  6. Return the roll-ups seam-side down to the skillet. Cook until golden brown on all sides, approximately 3-4 minutes total.
