- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup pure maple syrup
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 teaspoons minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon paprika

Instructions
- Preheat your oven to 400°F (200°C).
- Spread the cubed sweet potatoes onto half of a large sheet pan.
- In a mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, apple cider vinegar, minced garlic, salt, black pepper, and paprika until well blended.
- Drizzle half of the glaze over the sweet potatoes and toss gently to coat.
- Place the chicken breasts on the empty side of the sheet pan and brush them with the remaining glaze.
- Roast in the preheated oven for 25–30 minutes, flipping the sweet potatoes halfway through cooking.
- Ensure the chicken reaches an internal temperature of 165°F (75°C).
- Once done, garnish with fresh herbs and serve warm, drizzled with pan juices.
Notes
Let the chicken marinate in the glaze for an hour before cooking for extra flavor. Use pre-cut sweet potatoes for convenience.
