- 2 cups cooked chicken (shredded or cubed)
- 8 oz cream cheese
- 2 cups low-carb vegetables (broccoli or cauliflower)
- 1 cup cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the cooked chicken and cream cheese until well mixed.
- Stir in the low-carb vegetables, cheddar cheese, garlic powder, onion powder, salt, and pepper.
- Transfer the mixture into a greased baking dish, spreading it evenly.
- Bake for 25-30 minutes, or until the top is bubbly and golden.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
For best results, serve hot with fresh parsley on top. Pairs well with a side salad or cauliflower rice. Leftovers can be stored in an airtight container in the fridge for up to 4 days or frozen for up to 3 months.
