Ingredients

  • 2 eggs
  • 1/4 cup honey or maple syrup (or a sugar substitute)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Optional add-ins: chocolate chips, nuts, or spices

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, baking powder, and salt.
  3. In a separate bowl, whisk together the eggs and sweetener until well combined.
  4. Pour the wet ingredients into the dry mixture and stir until fully incorporated. Fold in optional add-ins if desired.
  5. Scoop spoonfuls of the mixture onto the prepared baking sheet, spacing them evenly apart.
  6. Bake for 12-15 minutes or until golden brown. Allow to cool on a wire rack before serving.

Notes

For egg-free version, use flax eggs (1 tbsp ground flaxseed mixed with 2.5 tbsp water per egg). Keep an eye on baking time as almond flour can brown quickly.
