Ingredients

- 2 cups almond flour
- 2 eggs
- 1/4 cup honey or maple syrup (or a sugar substitute)
- 1 tsp baking powder
- 1/2 tsp salt
- Optional add-ins: chocolate chips, nuts, or spices
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, baking powder, and salt.
- In a separate bowl, whisk together the eggs and sweetener until well combined.
- Pour the wet ingredients into the dry mixture and stir until fully incorporated. Fold in optional add-ins if desired.
- Scoop spoonfuls of the mixture onto the prepared baking sheet, spacing them evenly apart.
- Bake for 12-15 minutes or until golden brown. Allow to cool on a wire rack before serving.
Notes
For egg-free version, use flax eggs (1 tbsp ground flaxseed mixed with 2.5 tbsp water per egg). Keep an eye on baking time as almond flour can brown quickly.
