Ingredients

- 8 ounces of pasta (penne or fusilli)
- 2 cups of assorted vegetables (bell peppers, zucchini, cherry tomatoes)
- 1 cup of marinara sauce
- 1 cup of mozzarella cheese, shredded
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Salt and pepper to taste
- Olive oil for drizzling
- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large mixing bowl, combine the cooked pasta, chopped vegetables, marinara sauce, oregano, basil, salt, and pepper. Mix well until everything is evenly coated.
- Pour the pasta mixture into a greased baking dish, spreading it out evenly.
- Sprinkle the shredded mozzarella cheese over the pasta and drizzle with olive oil.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil before serving. Enjoy!
Notes
For extra flavor, try roasting the vegetables before adding them to the bake or mixing in grated Parmesan cheese with the mozzarella.
