Ingredients

  • 8 ounces of pasta (penne or fusilli)
  • 2 cups of assorted vegetables (bell peppers, zucchini, cherry tomatoes)
  • 1 cup of marinara sauce
  • 1 cup of mozzarella cheese, shredded
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large mixing bowl, combine the cooked pasta, chopped vegetables, marinara sauce, oregano, basil, salt, and pepper. Mix well until everything is evenly coated.
  4. Pour the pasta mixture into a greased baking dish, spreading it out evenly.
  5. Sprinkle the shredded mozzarella cheese over the pasta and drizzle with olive oil.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Garnish with fresh basil before serving. Enjoy!

Notes

For extra flavor, try roasting the vegetables before adding them to the bake or mixing in grated Parmesan cheese with the mozzarella.
