Ingredients

- 4 ears of corn
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup Greek yogurt (plain)
- 1 lime, juiced
- Salt and pepper, to taste
- 1/2 teaspoon chili powder (optional)
Instructions
- Grill the corn until it’s beautifully charred, about 10-15 minutes. Let it cool, then cut the kernels off the cob.
- Combine the grilled corn, halved cherry tomatoes, finely chopped red onion, and fresh cilantro in a large bowl.
- Whisk together the Greek yogurt, lime juice, salt, pepper, and optional chili powder in a small bowl.
- Drizzle the dressing over the corn mixture and toss well to combine.
- Serve chilled or at room temperature.
Notes
