A delightful twist on a classic favorite, combining the creamy tang of ranch with the protein goodness of chicken.


Ingredients

  • 1 low-carb tortilla
  • 1/2 cup cooked chicken, shredded
  • 2 tablespoons Greek yogurt
  • 2 wedges Laughing Cow cheese
  • 1 tablespoon ranch seasoning
  • Cooking spray or oil for the pan

Instructions

  1. In a bowl, combine the shredded chicken, Greek yogurt, and ranch seasoning. Mix thoroughly.
  2. Spread the chicken mixture over half of the low-carb tortilla.
  3. Top with the wedges of Laughing Cow cheese.
  4. Fold the tortilla in half.
  5. Heat a non-stick pan over medium heat, spray with cooking spray or add oil.
  6. Cook the quesadilla for about 3-5 minutes on one side, then flip and repeat until golden brown and the cheese is melted.
  7. Remove from the pan, slice, and serve warm.

Notes
