Ingredients

- 1 low-carb tortilla
- 1/2 cup cooked chicken, shredded
- 2 tablespoons Greek yogurt
- 2 wedges Laughing Cow cheese
- 1 tablespoon ranch seasoning
- Cooking spray or oil for the pan
Instructions
- In a bowl, combine the shredded chicken, Greek yogurt, and ranch seasoning. Mix thoroughly.
- Spread the chicken mixture over half of the low-carb tortilla.
- Top with the wedges of Laughing Cow cheese.
- Fold the tortilla in half.
- Heat a non-stick pan over medium heat, spray with cooking spray or add oil.
- Cook the quesadilla for about 3-5 minutes on one side, then flip and repeat until golden brown and the cheese is melted.
- Remove from the pan, slice, and serve warm.
Notes
