A beautiful medley of fresh vegetables wrapped in heartening, tomatoey goodness.
Ingredients

- 5 tbsp olive oil
- 1 red onion, diced
- 1 red bell pepper, diced
- 5 cloves garlic, minced
- Salt and pepper (to taste)
- ¼ tsp dry oregano
- ¼ tsp dry thyme
- 700 grams crushed tomatoes
- 2 tbsp fresh basil, finely chopped
- 2 small eggplants, sliced
- 2 zucchini, sliced
- 6 tomatoes, sliced
- 2 red onions, sliced
- 1 yellow bell pepper, sliced
- 2 tbsp fresh basil, finely chopped (for herb dressing)
- 2 tbsp olive oil (for herb dressing)
- 3 cloves garlic, minced (for herb dressing)
Instructions
- Slice all vegetables evenly and set them aside.
- Prepare the herb dressing by mixing minced garlic and chopped basil with olive oil, seasoning with salt and pepper.
- Preheat your oven to 200°C (390°F).
- In a large oven-proof pan, heat 1 tbsp olive oil over medium heat. Add diced red onion and red bell pepper, sauté until tender, then stir in the minced garlic.
- Season with salt, pepper, oregano, and thyme. Add crushed tomatoes and simmer for 10 minutes, then stir in chopped basil.
- Layer the sliced vegetables atop the sauce, alternating colors for presentation.
- Season the layers with salt and pepper, and drizzle herb dressing over the top.
- Cover with foil and bake for 40 minutes. Remove foil and bake for another 20 minutes until tender and slightly charred.
- Serve hot and enjoy!
Notes
Feel free to switch up the herbs according to your preference. Fresh thyme or rosemary can add a unique flair to the dish.
