Description
A comforting and quick weeknight dinner featuring sweet honey and tangy BBQ sauce with tender chicken and fluffy rice.
Ingredients

- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a skillet over medium heat and sear the chicken for 3–4 minutes on each side until golden brown. Remove from the pan and set aside.
- In a separate bowl, combine BBQ sauce, honey, soy sauce, and minced garlic.
- Toast the uncooked rice in the same pan for 1–2 minutes until slightly translucent.
- Add chicken broth and half of the BBQ sauce mixture to the pan, stirring to combine.
- Return the chicken to the pan and pour the remaining sauce over the top.
- Cover the pan and simmer on low heat for 15 minutes.
- If using mixed vegetables, stir them in now, cover again, and cook for an additional 5 minutes until rice is tender and chicken is cooked through.
- Let it sit for 5 minutes off heat and garnish with chopped green onions before serving hot.
Notes
For deeper flavor, marinate the chicken in the BBQ sauce mixture for a few hours before cooking.
