Description

A comforting and quick weeknight dinner featuring sweet honey and tangy BBQ sauce with tender chicken and fluffy rice.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3–4 minutes on each side until golden brown. Remove from the pan and set aside.
  3. In a separate bowl, combine BBQ sauce, honey, soy sauce, and minced garlic.
  4. Toast the uncooked rice in the same pan for 1–2 minutes until slightly translucent.
  5. Add chicken broth and half of the BBQ sauce mixture to the pan, stirring to combine.
  6. Return the chicken to the pan and pour the remaining sauce over the top.
  7. Cover the pan and simmer on low heat for 15 minutes.
  8. If using mixed vegetables, stir them in now, cover again, and cook for an additional 5 minutes until rice is tender and chicken is cooked through.
  9. Let it sit for 5 minutes off heat and garnish with chopped green onions before serving hot.

Notes

For deeper flavor, marinate the chicken in the BBQ sauce mixture for a few hours before cooking.
