  • ½ cup unsalted butter, melted
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup light brown sugar, packed
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon, divided
  • 3 tablespoons granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk together the melted butter and brown sugar until well combined.
  3. Add the egg, honey, and vanilla extract, whisking until smooth.
  4. Stir in the flour, salt, and ½ teaspoon of cinnamon until just combined; do not overmix.
  5. Pour the batter into the prepared pan.
  6. In a small bowl, mix the granulated sugar with the remaining ½ teaspoon of cinnamon, and sprinkle it over the batter.
  7. Bake for 22–25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the blondies to cool completely in the pan before cutting them into squares.

Notes

For a healthier version, you can substitute half of the butter with applesauce and use whole wheat flour instead of all-purpose.
