- 1 large egg
- ½ cup unsalted butter, melted
- ¼ cup honey
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup light brown sugar, packed
- ½ teaspoon salt
- 1 teaspoon ground cinnamon, divided
- 3 tablespoons granulated sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a bowl, whisk together the melted butter and brown sugar until well combined.
- Add the egg, honey, and vanilla extract, whisking until smooth.
- Stir in the flour, salt, and ½ teaspoon of cinnamon until just combined; do not overmix.
- Pour the batter into the prepared pan.
- In a small bowl, mix the granulated sugar with the remaining ½ teaspoon of cinnamon, and sprinkle it over the batter.
- Bake for 22–25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the blondies to cool completely in the pan before cutting them into squares.
Notes
For a healthier version, you can substitute half of the butter with applesauce and use whole wheat flour instead of all-purpose.
