A refreshing meal that balances savory and sweet with juicy chicken marinated in a honey-lime mix, served with avocado rice.
Ingredients
Scale

- 2 tablespoons honey
- 2 tablespoons lime juice (fresh is best!)
- 1 avocado, diced
- 1 cup cooked rice (white, brown, or jasmine)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, mix honey, lime juice, salt, and pepper.
- Marinate the chicken breasts in this mixture for at least 30 minutes.
- Heat olive oil in a skillet over medium heat.
- Cook the marinated chicken for 5-7 minutes on each side until fully cooked and golden brown.
- In another bowl, combine the cooked rice with the diced avocado, seasoning with salt and pepper to taste.
- To assemble, stack the avocado rice mixture on a plate, add the chicken on top, and garnish with fresh cilantro.
- Serve immediately for the best flavor and freshness.
Notes
For low-carb alternatives, swap out the rice for quinoa or cauliflower rice. Consider marinating the chicken longer for enhanced flavor.
