Description

A quick and easy Instant Pot Lemon Chicken dish, ready in just 30 minutes, bursting with flavor and perfect for busy weeknights.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 tbsp honey or maple syrup
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp cornstarch
  • 2 tbsp cold water
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Pat the chicken dry with paper towels and season with salt and pepper.
  2. Set the Instant Pot to ‘Sauté’, add olive oil, and brown the chicken pieces for 2-3 minutes on each side. Remove and set aside.
  3. Add chopped onion to the pot and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute.
  4. Pour in chicken broth, deglazing the pot by scraping the bottom with a wooden spoon.
  5. Stir in lemon juice, honey (or maple syrup), and Italian seasoning.
  6. Return the chicken to the pot, secure the lid, set the vent to ‘Sealing’, and cook on ‘Manual’ for 8 minutes for thighs or 6 minutes for breasts.
  7. Allow the Instant Pot to naturally release pressure for 5 minutes, then perform a quick release for remaining steam.
  8. Remove chicken, set the pot to ‘Sauté’, mix cornstarch with cold water to create a slurry, whisk it into the sauce, and stir until thickened about 2-3 minutes.
  9. Return chicken to the pot, coat with sauce, and serve hot, garnished with fresh parsley if desired.

Notes

Pairs well with rice or mashed potatoes. Squeeze fresh lemon juice before serving for added flavor. Leftovers can be stored in the refrigerator for up to 4 days or frozen for 3 months.
