Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups peeled and diced apples
  • 1 teaspoon ground cinnamon
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan or line it with parchment paper.
  2. Mix the dry ingredients in a large bowl: combine flour, baking powder, baking soda, cinnamon, and salt.
  3. Cream the softened butter and sugar in another bowl until light and fluffy.
  4. Add the eggs one at a time, then stir in the vanilla extract.
  5. Combine the wet and dry ingredients, alternating with the milk until just incorporated.
  6. Fold in diced apples and raisins, if using.
  7. Pour the batter into your prepared pan, smooth the top with a spatula.
  8. Bake! Place in the oven and bake for about 40-45 minutes or until a toothpick comes out clean.
  9. Cool for a few minutes before transferring to a wire rack to cool completely.
