Instructions
- Beat the softened cream cheese and butter together until smooth and creamy.
- Gradually add the confectioners’ sugar and vanilla extract to the mixture, blending until everything is well incorporated.
- Fold in the shredded coconut until it’s evenly distributed throughout the mixture.
- Roll the mixture into small oval shapes—about the size of a walnut.
- Coat each shape in ground cinnamon.
- Place the rolled candies on a parchment-lined baking sheet and chill in the fridge for at least 30 minutes before serving.
