- 2 cups cooked chicken, shredded
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup cream (or Greek yogurt)
- 1/2 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, broccoli florets, cauliflower florets, and half of the shredded cheese.
- In another bowl, mix together the cream (or Greek yogurt), chicken broth, garlic powder, onion powder, salt, and pepper.
- Pour the sauce over the chicken mixture; stir until well combined.
- Transfer this mixture to a greased casserole dish, spreading it evenly.
- Top with the remaining cheese.
- Bake for 25-30 minutes or until the casserole is bubbly and golden on top.
- Let it cool slightly before serving.
Notes
This casserole can be stored in an airtight container in the fridge for up to 3 days or frozen before baking. Use rotisserie chicken for quicker prep.
