Description

A quick and comforting midnight pasta dish made with pantry staples and fresh ingredients.


Ingredients

  • Pasta of your choice (spaghetti or linguine works well)
  • Olive oil (extra virgin preferred)
  • Garlic (freshly minced)
  • Red pepper flakes (to taste)
  • Fresh parsley (chopped)
  • Parmesan cheese (grated)
  • Salt (to taste)
  • Black pepper (freshly cracked)

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve a bit of the pasta cooking water.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes. Cook until fragrant, about 2 minutes.
  4. Drain the pasta and add it to the skillet, tossing with the garlic and olive oil mixture. If it seems dry, add a splash of the reserved pasta water.
  5. Stir in chopped parsley and grated Parmesan cheese, mixing well.
  6. Season with salt and black pepper to taste.
  7. Serve immediately, garnished with extra Parmesan if desired.
