A quick and comforting midnight pasta dish made with pantry staples and fresh ingredients.
Ingredients
- Pasta of your choice (spaghetti or linguine works well)
- Olive oil (extra virgin preferred)
- Garlic (freshly minced)
- Red pepper flakes (to taste)
- Fresh parsley (chopped)
- Parmesan cheese (grated)
- Salt (to taste)
- Black pepper (freshly cracked)
Instructions
- Cook the pasta according to package instructions until al dente. Reserve a bit of the pasta cooking water.
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and red pepper flakes. Cook until fragrant, about 2 minutes.
- Drain the pasta and add it to the skillet, tossing with the garlic and olive oil mixture. If it seems dry, add a splash of the reserved pasta water.
- Stir in chopped parsley and grated Parmesan cheese, mixing well.
- Season with salt and black pepper to taste.
- Serve immediately, garnished with extra Parmesan if desired.
