Ingredients

- 2.5 lb potatoes, peeled and sliced into 1/8-inch rounds
- 1 cup Dubliner cheese (Kerrygold recommended)
- 1 tsp fresh chives, minced (for garnish)
- 4 tbsp butter, melted and slightly cooled
- 1/2 cup cream
- 3/4 tsp salt
- 1/4 tsp pepper
- 2 garlic cloves, minced very fine
- 1 pinch nutmeg
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the sliced potatoes with melted butter, cream, salt, pepper, minced garlic, and nutmeg in a large mixing bowl. Stir until well coated.
- Arrange half of the potato slices in a greased baking dish in a single layer.
- Sprinkle half of the Dubliner cheese over the first layer of potatoes.
- Add the remaining potato slices, then top with the rest of the cheese.
- Cover the dish with aluminum foil and bake for about 45 minutes.
- Remove the foil and continue to bake for an additional 15 minutes or until the potatoes are tender and the cheese is bubbly and golden.
- Garnish with minced chives before serving.
Notes
For a creamier texture, adjust the amount of cream or substitute with a non-dairy option.
