Ingredients

  • 2.5 lb potatoes, peeled and sliced into 1/8-inch rounds
  • 1 cup Dubliner cheese (Kerrygold recommended)
  • 1 tsp fresh chives, minced (for garnish)
  • 4 tbsp butter, melted and slightly cooled
  • 1/2 cup cream
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 2 garlic cloves, minced very fine
  • 1 pinch nutmeg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the sliced potatoes with melted butter, cream, salt, pepper, minced garlic, and nutmeg in a large mixing bowl. Stir until well coated.
  3. Arrange half of the potato slices in a greased baking dish in a single layer.
  4. Sprinkle half of the Dubliner cheese over the first layer of potatoes.
  5. Add the remaining potato slices, then top with the rest of the cheese.
  6. Cover the dish with aluminum foil and bake for about 45 minutes.
  7. Remove the foil and continue to bake for an additional 15 minutes or until the potatoes are tender and the cheese is bubbly and golden.
  8. Garnish with minced chives before serving.

Notes

For a creamier texture, adjust the amount of cream or substitute with a non-dairy option.
