- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 1 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- Cream together the softened butter and sugar until light and fluffy (3-5 minutes).
- Add eggs one at a time, beating well after each addition, then stir in vanilla and drained crushed pineapple.
- In a separate bowl, combine flour, baking powder, salt, and shredded coconut.
- Gradually mix the dry ingredients into the wet mixture until combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes, then remove from the pan and let cool completely.
Notes
For a richer flavor, try adding a teaspoon of coconut extract or toasting the shredded coconut before mixing.
