  • 2 large eggs

  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Cream together the softened butter and sugar until light and fluffy (3-5 minutes).
  3. Add eggs one at a time, beating well after each addition, then stir in vanilla and drained crushed pineapple.
  4. In a separate bowl, combine flour, baking powder, salt, and shredded coconut.
  5. Gradually mix the dry ingredients into the wet mixture until combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. Cool in the pan for 10 minutes, then remove from the pan and let cool completely.

Notes
