  • 2 cups blueberries (fresh or frozen)
  • 6 eggs
  • 2 cups milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Butter (for greasing the baking dish)
  • Powdered sugar (optional, for serving)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
  2. Cut the bread into cubes and place half of it in the baking dish. Scatter half of the blueberries on top.
  3. In a bowl, whisk together the eggs, milk, maple syrup, vanilla extract, and cinnamon until fully combined. Pour half of this mixture over the bread and blueberries.
  4. Layer the remaining bread and blueberries over the first layer, then pour the rest of the egg mixture on top. Press down gently to ensure everything is soaked.
  5. Let it sit for about 15 minutes to absorb.
  6. Bake in the preheated oven for 45-50 minutes or until golden brown and puffy.
  7. Serve warm, dusted with powdered sugar if desired.

Notes

For a dairy-free option, use almond milk instead of regular milk. Stale bread works perfectly for added texture.
