Description

Ingredients

  • 2 lbs lamb or beef, cut into chunks
  • 4 cups beef broth
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 egg

Instructions

  1. In a large pot, brown the meat over medium heat until it’s well-seared.
  2. Add onions and garlic to the pot, sautéing until they soften and become fragrant.
  3. Stir in tomato paste, Worcestershire sauce, thyme, bay leaf, salt, and pepper.
  4. Pour in the beef broth, then add the potatoes and carrots. Bring to a boil, then reduce heat, cover, and let simmer for 90 to 120 minutes until the meat is tender.
  5. For the cheddar dumplings, combine flour, baking powder, and salt in a bowl. Stir in shredded cheese.
  6. In another bowl, mix milk, melted butter, and egg. Pour this mixture into the dry ingredients and mix until just combined.
  7. Drop spoonfuls of the dumpling batter onto the stew. Cover and cook for an additional 15 to 20 minutes until the dumplings are fluffy.
  8. Serve hot and enjoy the warmth of your Irish stew!
