Ingredients

- 2 lbs lamb or beef, cut into chunks
- 4 cups beef broth
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 2 onions, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 egg
Instructions
- In a large pot, brown the meat over medium heat until it’s well-seared.
- Add onions and garlic to the pot, sautéing until they soften and become fragrant.
- Stir in tomato paste, Worcestershire sauce, thyme, bay leaf, salt, and pepper.
- Pour in the beef broth, then add the potatoes and carrots. Bring to a boil, then reduce heat, cover, and let simmer for 90 to 120 minutes until the meat is tender.
- For the cheddar dumplings, combine flour, baking powder, and salt in a bowl. Stir in shredded cheese.
- In another bowl, mix milk, melted butter, and egg. Pour this mixture into the dry ingredients and mix until just combined.
- Drop spoonfuls of the dumpling batter onto the stew. Cover and cook for an additional 15 to 20 minutes until the dumplings are fluffy.
- Serve hot and enjoy the warmth of your Irish stew!
