Description
A comforting and aromatic beef curry infused with warm Indian spices, perfect for busy weeknights.
Ingredients

- 2 tbsp oil or ghee
- 1 kg chuck or braising steak (cut into 3 cm cubes)
- 1 cup chopped onions
- 2 garlic cloves (peeled and chopped)
- 2 cm fresh ginger (peeled and chopped)
- ½ tsp ground turmeric
- 2 tsp ground coriander
- 1 tsp garam masala
- ½ tsp ground cumin
- ½ tsp red chili powder
- 1 cup beef broth
- ½ cup water
- 3 cm cinnamon stick
- 1 dried bay leaf
- 2 tbsp chopped cilantro (plus more to garnish)
- Salt to taste
Instructions
- Heat 1 tablespoon of oil or ghee in a frying pan over medium heat.
- In batches, sear the beef cubes until browned on all sides. Once browned, transfer them to your slow cooker.
- Add the remaining oil to the pan and sauté the chopped onions, garlic, and ginger for 2-3 minutes until softened.
- Stir in the turmeric, coriander, cumin, garam masala, and chili powder, allowing the spices to become fragrant.
- Pour in the beef broth and water, scraping up any browned bits from the bottom of the pan. Simmer for an extra 2 minutes.
- Transfer this mixture to the slow cooker. Add the cinnamon stick, bay leaf, and chopped cilantro. Season with salt to taste.
- Cover and cook on low for 480 minutes or high for 240 minutes, allowing the flavors to blend beautifully.
- When ready to serve, garnish with fresh cilantro and enjoy with naan or basmati rice.
Notes
This dish can be enhanced with vegetables like carrots and peas or made vegetarian with chickpeas.
