- 1 cup chopped celery (optional)
- 2 tablespoons cornstarch (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- Prep the turkey necks: Rinse and pat the turkey necks dry. Season with salt, black pepper, and smoked paprika, ensuring an even coating.
- Sear the meat: Heat olive oil in a pot over medium-high heat. Sear the turkey necks for about 5-7 minutes per side until browned. Remove and keep aside.
- Sauté veggies: In the same pot, add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and sauté for an additional minute.
- Optional vegetables: If using, add mushrooms, carrots, or celery and sauté for about 5 minutes until softened.
- Combine ingredients: Add turkey necks back into the pot. Pour in chicken broth and water. Stir in soy sauce, Worcestershire sauce, dried thyme, and bay leaf.
- Simmer to perfection: Bring to a gentle boil, reduce heat to low, cover, and simmer for 1.5 to 2 hours until fork-tender.
- Thicken the sauce: For a thicker sauce, mix cornstarch with cold water to create a slurry. Stir into the pot and cook for an additional 5-10 minutes.
- Final touches: Taste and adjust seasoning before removing the bay leaf. Garnish with freshly chopped parsley.
