- 2 Pounds Potatoes (Yukon gold or russet)
- 1/4 Cup Olive Oil
- 1 tsp Smoked Paprika
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/4 tsp Cayenne
- Tortillas (Flour or corn)
- Toppings: Shredded lettuce, Chopped tomatoes, Shredded vegan cheese, Salsa
Instructions
- Prep the Potatoes: Cut potatoes into small pieces, soak in water for 30 minutes, rinse, strain, and pat dry.
- Cook: In a pan over medium heat, add olive oil and potatoes. Season with spices, stir well to coat.
- Fry: Cook, stirring often, until potatoes are golden brown.
- Assemble Tacos: Warm tortillas, place spiced potatoes in the center, and top with lettuce, tomatoes, vegan cheese, and salsa.
