Traditional Irish Colcannon

Description

A creamy and buttery fusion of potatoes and kale, this Traditional Irish Colcannon is a comforting and heartwarming dish perfect for any occasion.


Ingredients

Scale
  • 3 large (about 2 lbs) Yukon Gold potatoes, peeled and quartered
  • 2 tsp fine salt, plus more to taste
  • 6 Tbsp unsalted butter, divided
  • 3 cups coarsely chopped kale (leaves only)
  • 4 medium green onions, thinly sliced (white and green parts separated)
  • 1 bay leaf (optional)
  • 1 1/4 cups milk
  • 1 tsp dry mustard powder
  • Freshly ground black pepper, to taste

Instructions

  1. Place the quartered Yukon Gold potatoes into a large pot, cover with cold water (about 2 inches above the potatoes), and stir in 2 tsp of salt. Bring to a boil.
  2. Cook for approximately 12 minutes, or until the potatoes are fork-tender. Drain and set aside.
  3. Melt 2 Tbsp of butter in a skillet over medium heat. Add the chopped kale along with the white parts of the green onions and the bay leaf, if using. Sauté for about 5 minutes until tender.
  4. Pour in the milk, then whisk in the mustard powder. Allow the mixture to come to a gentle simmer before lowering the heat to keep it warm.
  5. Return the drained potatoes to the pot. Add the remaining 4 Tbsp of butter and the green parts of the green onions. Mash the mixture until nearly smooth.
  6. Remove the bay leaf from the kale mixture, then pour it into the mashed potatoes. Stir to combine thoroughly. Let it sit briefly to thicken, then season with more salt and freshly ground black pepper to taste.
  7. Spoon the colcannon into a serving bowl. Drizzle with additional melted butter on top if desired.

Notes

If you have leftovers, colcannon stores well in an airtight container in the refrigerator for up to 3 days or can be frozen for longer storage. Reheat gently with a splash of milk if needed.
