Description

A hearty potato pancake that celebrates Irish culture with crispy edges and a soft interior, perfect for St. Patrick’s Day.


Ingredients

  • 2 lbs (900g) potatoes: Half raw and half cooked and mashed
  • 1 cup (120g) all-purpose flour
  • 1 cup (240ml) buttermilk (or milk with 1 tbsp lemon juice or vinegar as a substitute)
  • Salt: to taste
  • Black pepper: to taste
  • Butter or oil: for frying
  • Optional: finely chopped chives or green onions for garnish

Instructions

  1. Boil potatoes until tender, about 15-20 minutes, then mash and set aside.
  2. Grate the remaining raw potatoes.
  3. Drain excess liquid from the grated potatoes using a kitchen towel.
  4. Combine the mashed potatoes, grated raw potatoes, flour, salt, and pepper in a large bowl.
  5. Add buttermilk to the potato mixture until a thick batter forms.
  6. Heat a nonstick or cast iron skillet over medium heat and add butter.
  7. Cook about 1/4 cup of batter in the skillet for 4-5 minutes, flip and cook for another 3-4 minutes until golden brown.
  8. Keep cooked Boxty warm in a low oven.
  9. Serve hot, garnished if desired.

Notes

For added flavor, try incorporating chopped herbs or cheese into the batter. Adjust cooking time for extra crispy edges.
