- 1 pound breakfast sausage
- 1 package frozen hash browns (about 30 oz)
- 8 large eggs
- 1 cup milk
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped green onions
Instructions
- In a skillet over medium heat, cook the breakfast sausage until browned. Once cooked, set it aside to cool.
- In a large bowl, whisk together the eggs, milk, sour cream, salt, and pepper until the mixture is smooth.
- Grease a 9×13 baking dish. Start by layering half of the hash browns, followed by half of the cooked sausage, and a generous layer of cheese. Repeat with the remaining ingredients.
- Pour the egg mixture evenly over the top of the layered ingredients.
- Cover the dish with foil and place it in the refrigerator overnight.
- In the morning, preheat your oven to 350°F. Bake the casserole, covered, for 45 minutes. Then, remove the foil and bake for an additional 20–25 minutes until it is golden and fully set.
- Top with chopped green onions and serve warm.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. You can freeze portions for up to 3 months.
