  • Total Time: 45 minutes
  • Yield: 4 servings 1x
  • Diet: Gluten-Free

Description

A comforting and invigorating dish featuring tender chicken, creamy white beans, and zesty spices, perfect for cozy evenings or quick weeknight dinners.

Ingredients

Scale
  • 2 cups shredded chicken (rotisserie works well)
  • 2 cans white beans (great northern or cannellini), drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño, diced (optional)
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp oregano
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, heat a splash of oil over medium heat. Add the diced onion, garlic, and optional jalapeño. Sauté until softened, about 5 minutes.
  2. Stir in the shredded chicken, drained white beans, chicken broth, cumin, chili powder, and oregano.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes until everything is heated through and flavors meld.
  4. Adjust the seasoning with salt and pepper as needed. Serve warm, garnished with fresh cilantro if desired.

Notes

For a creamier texture, consider adding a splash of heavy cream at the end. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.
