Description
A comforting and invigorating dish featuring tender chicken, creamy white beans, and zesty spices, perfect for cozy evenings or quick weeknight dinners.
Ingredients
Scale
- 2 cups shredded chicken (rotisserie works well)
- 2 cans white beans (great northern or cannellini), drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jalapeño, diced (optional)
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp oregano
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, heat a splash of oil over medium heat. Add the diced onion, garlic, and optional jalapeño. Sauté until softened, about 5 minutes.
- Stir in the shredded chicken, drained white beans, chicken broth, cumin, chili powder, and oregano.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes until everything is heated through and flavors meld.
- Adjust the seasoning with salt and pepper as needed. Serve warm, garnished with fresh cilantro if desired.
Notes
For a creamier texture, consider adding a splash of heavy cream at the end. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.
