- 6 large eggs
- ½ cup full-fat Greek yogurt (unsweetened, plain)
- 1 tablespoon baking powder (preferably aluminum-free)
- ¼ cup melted butter or coconut oil
- ¼ teaspoon salt
- ½ teaspoon xanthan gum or psyllium husk powder
- ½ cup finely ground almond flour (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare your loaf pan by lining it with parchment paper or greasing it with oil.
- In a large bowl, whisk together the eggs, Greek yogurt, and melted butter (or coconut oil) until smooth and creamy.
- Add the baking powder, salt, and xanthan gum (or psyllium husk powder). If using almond flour, add it now. Stir until well-combined and slightly thickened.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 35–45 minutes, until golden and a toothpick inserted comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely before slicing.
Notes
Try it toasted with cream cheese and smoked salmon, or enjoy it as a side with soups or salads. Store in an airtight container at room temperature for up to three days or freeze for longer storage.
